오징어젓갈
Ojinguh jutgal is a delicious banchan (side dish) enjoyed by Koreans all year around. It's a spicy fermented, pickled squid delicacy packed with lots of flavors which goes perfectly with a traditional Korean meal such as soup or stew and steamed rice. Typical ingredients to make this side dish consists of raw squid, gochugaru (red chili pepper flakes), sliced garlic, fish sauce, ginger, red/green chili peppers, sesame oil and sesame seeds. This side dish can be kept refrigerated for months and it is easily available to purchase at Korean supermarkets should you decide to purchase and store some in your fridge. Some restaurants are also well known for their signature side dishes such as this particular fermented squid.
